Dairy Processing & Products

The mission of the Cal Poly Creamery and Dairy Products Technology Center is to support and maintain the economic health and growth of the dairy foods industry by:

  • Conducting timely research utilizing dairy-based ingredients that could lead to new and improved dairy food products, processes and technologies.
  • Increasing the number of well trained graduates available for careers in the dairy and allied industries.
  • Providing a center to facilitate the transfer of technology through symposiums, short courses and publications for the industry.
  • Ensuring that current and new dairy products are truly nutritious, wholesome and safe.

The Creamery is used as a teaching and research laboratory, and to manufacture products for sale. Students learn how to manage a processing plant, distribute and market dairy products, and also learn the science and technology of manufacturing milk, cheese, butter, yogurt, ice cream, and other dairy products.

A Master of Science degree in Agriculture with a specialization in Dairy Products Technology is also offered for students who wish to enrich their education and career prospects through applied science while working on research projects in the Dairy Products Technology Center under the supervision of the Dairy Science research faculty.
